A New Begining!

So I know that I have severely neglected my blog..I know this. Not that my life is dull and I have nothing to write about..but I am just so very busy. Due to this fact, I have decided to revive my blog, but in a different way. I want to turn it into a Recipe Blog! So I will try and be better at posting and maybe help you find a few new things!

Here is my first submission Chicken Nacho Bake...Enjoy!
4 small boneless skinless chicken breast halves (1 lb.)
1/2 cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/2 cup crushed tortilla chips
1/2 cup KRAFT Mexican Style Finely Shredded Four Cheese

PREHEAT oven to 400ºF. Place chicken on foil-covered baking sheet. Slice three cuts on top of each chicken breast with sharp knife.

TOP each chicken breast evenly with salsa, sour cream and tortilla chips.

BAKE 20 min. Remove from oven; sprinkle with cheese. Bake an additional 10 min. or until chicken is cooked through (165ºF).


Instead of using salsa, I used Joe T. Garcia's Tomatillo Sauce...it was fab!

New Finds!


So today I was documenting the bruises on Marc's body...ya know, from his trip down the ravine. (I won't be sharing those...to much for a blog!) But as I was reviewing the pictures, I found some pictures of my cute little Gracie Kate that I took back in March..I had forgotten bout them! So here they are!

Good things and Bad Things

So as I sit here at the hospital,(not for me)I have realized that I have never really spent a lot of time in hospitals, which is a good thing. Yet, I have spent about the last 24 hours here because my very good sweet "friend" accidentally drove himself off into a 20 foot ravine.

Oops. He really shouldn't be alive OR be able to walk..but is both...or at least will be in the future...walking that is!
So he is in ICU with a severely broken and bruised body. It breaks my heart to see the pain and sadness in his eyes when he looks at me. It's heart wrenching. A few years ago he had surgery where 6 feet of intestine was removed and he says this is worse. This is the very sad part..to see all these sick people on the edge or life and death. I couldn't work here!

But on a happier note..there are babies that are born here! Lots of Texas babies..which can only be good! AND this place has the best food! I think I had the best grilled chicken sandwich EVER today! Also some of the best pecan pie ever..and I am picky about my pecan pie! And it's all so cheap..probably because they want you to feel better about paying the very large and expensive medical bills.

Also, I am writing this post from the courtesy high speed internet! Gotta love it! It's better than anything you can get from my small hillybilly town!

Speaking of hillbillys...there are so many of there here! Everywhere! It's like the come in from the sticks and hang out here! They literlly have camped out in the ICU waiting room..with blankets and cheese and crackers and everything! It's amazing..i had no idea people did this! So does this mean hillbillys have more accidents or do they just like the nice amenities? Like me?

THE BIG 29!


So tomorrow I will have been on this earth 29 years! I can't believe it..it has gone fast. So, in honor of my birth, I have decided to share with you 29 things about me.
Things that you probably don't know and maybe don't care to know for most of them are all nothing but little tidbits about me!

  1. I once almost lost an eye to a rooster…still have the scar.
  2. I was voted best hair in high school.
  3. I will not eat anything that ever lived in water…some might call it a crustacean anxiety.
  4. I love to watch movie trailers…and can do so for a lengthy amount of time.
  5. I hope I never marry any one with the last name of G. I hate the way I write capital Gs.
  6. I still wear upper and lower retainers to bed.
  7. I don’t have a middle name.
  8. I have never broken a bone.
  9. I was awake for my wisdom teeth being taken out.
  10. I built my first snowman at the age of 20.
  11. I was tongue tied until my tongue was clipped at the age of 6. From that I have a hard time saying the word Jerusalem…but thankfully have conquered the word turquoise.
  12. I have two recipes for chocolate chip cookies, one for baking and one for eating the dough.
  13. Something I have inherited from my mother is a 100 year old armadillo shell.
  14. I supposedly painted a car with yellow house paint with Luke.
  15. I was named after my paternal grandmother who I never met.
  16. I hate it when clocks are not set to the correct time.
  17. I got my first speeding ticket around the age of 24…and then another one less than two weeks later…but none since then.
  18. My guilty pleasures Blue Bell ice cream, Oreos, taking naps and purchasing music from iTunes.
  19. I have only lived in 3 states: New Mexico – 6 months, Utah 8 years, Texas 20+ years
  20. I once had a gingavectomy.
  21. I have been called Ellen, Ellie, Elle Belle, Elle, Nor, El Ner, Pooh, Smelly Ellie, Dory, Ellie May and Flossy May Sweat Belly (something from girls camp.)
  22. I prefer dark chocolate over the other kinds.
  23. I want to get married in the month of October.
  24. I have always wanted to go to hair school.
  25. I love Oreo’s dipped in milk.
  26. I have never snow or water skied.
  27. Peonies and poppies are my favorite flowers.
  28. I prefer to drive a stick shift.
  29. I was born on Tuesday May 6, 1980 at 2:57 p.m in Albuquerque, New Mexico!

Come Back to Texas!

On April 28, 2008 I was officially back to the Great State of Texas! I can't believe it's been a year. It has gone so fast. I have loved it and you couldn't pay me to go back! Although I do miss the snow and all my friends! I have decided that the two best decisions that I have made in my life were to move to Utah..and leave Utah! It was a great time and I wouldn't have changed anything but it was time to move on.
So, thank you Texas for welcoming me back!



On Tuesday I begin a week long celebration! It will start with celebrating my return to this blessed state and end with celebrating my 29th birthday! Pictures will follow...so stay tuned!
